The Makings of a Watermelon Pizza

Good crust and yummy cheese are the make-ups of a perfect pizza. However, what if we replaced the bread crust with some fresh watermelon and topped it with feta instead of mozzarella. I think we would still have a pretty fantastic pizza. Plus, it’s way healthier.

 

For this 4th of July, a friend and I decided to try this red, white and blue dish out. We headed over to Trader Joe’s early in the morning to gather all the ingredients: a big whole watermelon, feta, arugula, walnuts, and blueberries. Carrying that watermelon back to the apartment was definitely an adventure. That thing was heavier than we imagined. We cradled it like a baby and called it ours. But when it was time to cut into it, we didn’t hold back.

With a long and sharp knife we cut a big chunk of ‘crust’ from the middle. Topped it with our salad and drizzled olive oil and balsamic vinaigrette. Once everything was set, we cut our pizza into 8th’s and enjoyed the delicious slices.
